Heat oil in a large skillet or wok over medium-high heat. Fry ginger in hot oil until fragrant, then add these slices, soy sauce, dark soy sauce, salt, and sugar.
Cook, stirring occasionally, for 10 minutes. Stir in the sesame oil, green onion, and rice wine. Simmer until the slices are tender.
Storage: Store the product in the freezer. It can be thawed by putting the packet in the chiller for 4-5 hours before consumption or keeping the vacuum packed buff under running tap water for faster thawing.
